Seasoning. Next… take your food
OUTSIDE and slap it into a hot, dry, cast iron
skillet that’s been heated to HIGH on your
gas grill. Cook 90 seconds on each side
and… Ca c’est bien cher! Tender, juicy,
flavorful! (PLEASE NOTE: This
recipe must be prepared outdoors. It
will produce a lot of smoke).
Marinades - Mix two or three tablespoons of
Colonel Paul’s Cajun Seasoning or Colonel
Paul’s Creole Spice with red wine, olive
oil, and Worcestershire sauce… and you’ll
have a wonderful marinade for red meats.
Or… mix the Colonel Paul’s Seasonings with
white wine, olive oil, and lemon juice to
marinate seafood or chicken. Just place
your meat in the marinade, let it stand in the
refrigerator for 1 to 4 hours… then cook as
