Meet the Colonel
     New Orleans born Colonel Paul wanted to create a special seasoning that would accurately reflect the original taste and flavor of Old New Orleans and the Louisiana Bayou Country.  Working late nights at his home on Bourbon Street in the heart of the French Quarter, Colonel Paul researched old Louisiana cookbooks and historical records to learn how his colonial ancestors prepared their food.   After years of extensive research… and many trials in the kitchen… Colonel Paul discovered just the right blend of Herbs and Spices to wonderfully season food just like the Cajuns and Creoles of colonial Louisiana did for generations.  The result was Colonel Paul’s Cajun Seasoning (in Mild, Medium and Hot n’ Spicy) and Colonel Paul’s Creole Spice.  These delicious all natural seasonings are carefully blended to recreate the delicate, yet complex flavors used in Louisiana Cuisine.  With Colonel Paul’s in the kitchen, anyone can enjoy the authentic taste and flavor of the Bayou!
